Central Vietnamese cuisine is famous for its heavy use of chili. In the restaurant, taste the local dishes and do not hesitate to ask for a less spicy version of the typical traditional dishes, among which:
This signature Vietnamese soup from Hue consists of noodles and beef soaked in a normally spicy broth, seasoned with cilantro, chopped green onions, raw onions, banana flowers, and Thai basil, among other things.
A specialty of Central Vietnam that you absolutely must taste during your visit to Da Nang. This noodle dish is topped with beef, chicken, or pork, and seasoned with herbs, often eaten with rice cakes.
Cao lau is the culinary specialty of Hoi An with a broth made from rice noodles mixed with mint (or other herbs). It can be eaten with pork slices, soybeans and crackers.
Chicken rice is another exclusive dish of Hoi An cuisine. You can find the recipe in all delicious Asian cookbooks. Hoi An Chicken Rice is above all a colorful dish: the yellow color of the rice contrasts with the green of the herbs (turmeric and coriander), the white of the chicken and minced onion, and the red of the chili.
